Mid-January Recap

Hello everyone. January has been a busy month for us. Josh has been taking certification tests so he can find an internship. Exciting things for the future.

My Grandpa Bell passed away two weeks ago. That was very bittersweet. I was happy that he is not suffering anymore. He was pretty sick the last few years of his life. But I am sad because my Grandpa has been around a long time and I’ll miss him. He was a great man. We went to the funeral and it was nice to see family and reminisce about his life.  Here is a link to his obituary. http://www.serenicare.com/notices/Bud-Bell. One thing I loved about him was he randomly loved to sing opera style. He would take us swimming at the pool in his retirement residence when I was younger and he would sing church hymns at the top of his lungs. He was a very faithful and happy man. He was a wonderful husband, dad, and grandfather. It’s sad to say goodbye to such a great man. I will miss him very much. I’m glad I know I will see him again one day. I love you Grandpa! ‪#‎familiesareforever‬

Josh and I have been wanting to do a “Chopped” cook-off with my brother Joseph and his wife Quincy. We were finally able to do that last weekend. Josh’s brother, Zach, was the judge for us. Joseph and Quincy came dressed the same and made paper hats. Serious competitors. We did an appetizer round and main course round. We had to use the ingredients Gorgonzola cheese and pecans for the appetizer round. We used chicken thighs and asparagus for the main course round. Each team picked an ingredient for the round. Both teams made salad for the first round and Joseph and Quincy won the round. For the main course, Josh and I made Chicken, Asparagus pesto pizza and Joseph and Quincy made chicken pot pies. It was close but Josh and me won that round. We ended in a tie. I guess we’ll have to do a dessert round tie breaker. 🙂

Zach didn’t want his picture taken so this is as close as I got.

Also, happy news…we’re going to be an aunt and uncle…again. Joseph and Quincy are expecting a child. Yay!

Finally, I am so grateful for my Joshy. He’s so good to me and is my biggest fan. I love him so much!
